Preparation
- Beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3–4 minutes.
- Add the eggs one at a time, then mix in the vanilla extract. If the mixture looks slightly curdled, don't worry.
- In another bowl, whisk together the flour, dark cocoa powder, baking soda, baking powder, and salt.
- Add the dry ingredients to the wet mixture and mix on low until just combined.
- Fold in the dark chocolate and crushed freeze-dried raspberries. If using fresh raspberries, add them last and fold gently.
- Cover the bowl and chill the dough in the refrigerator for at least 45-60 minutes.
Baking
- Preheat the oven to 350°F (175°C).
- Scoop 2-tablespoon balls of dough onto a lined baking sheet, spacing them a few inches apart.
- Bake for 9-11 minutes until the edges are set and the centers are slightly soft. Do not overbake.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a rack.
Notes
For an extra touch, press a few extra chocolate chips and raspberry bits on top right after baking for a better presentation.
