Ingredients
  

For the base and topping
  • 1 cup unsalted butter, softened Use good quality butter for best texture.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt If using salted butter, reduce to 1/4 teaspoon.
For the caramel filling
  • 1 cup caramel sauce Store-bought is fine; homemade is also great.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Gradually add the flour and salt, mixing until just combined.
  4. Press two-thirds of the dough into the bottom of the prepared pan.
  5. Pour the caramel sauce over the crust, spreading it evenly.
  6. Crumble the remaining dough over the caramel layer.
Baking
  1. Bake for 25-30 minutes or until golden brown.
  2. Allow to cool completely before cutting into bars, then sprinkle with sea salt.
Serving
  1. Serve warm or at room temperature.

Notes

For extra texture, consider folding in toasted pecans. If the caramel runs a bit, it means it's gooey and delicious. Don't hesitate to hide a spare pan for late-night snacking!
