  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice or quinoa
  • 1 cup Greek yogurt
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh dill, chopped
  • 1 tablespoon lemon juice
  • to taste salt and pepper
  • 1/2 cup cherry tomatoes, halved Do not press down while placing in the dish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, rice or quinoa, Greek yogurt, cucumber, red onion, feta cheese, dill, lemon juice, salt, and pepper. Mix well until fully combined.
  3. Transfer the mixture into a greased baking dish. Top with the halved cherry tomatoes.
Baking
  1. Cover the dish with foil and bake for 25-30 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until heated through and slightly golden on top.
  3. Serve warm.

Notes

For variations, consider adding olives or red pepper flakes. If making ahead, assemble and refrigerate for up to 24 hours before baking.
