Easy Mediterranean Quesadilla

Ingredients
  

Main Ingredients
  • 4 large large flour tortillas Get the big soft ones that fold easily.
  • 1 cup shredded mozzarella cheese Shred yourself for better texture.
  • 1 cup crumbled feta cheese Trader Joe’s feta is recommended.
  • 1 cup chopped spinach Fresh is ideal.
  • 1/2 cup sliced olives Kalamata or black olives work.
  • 1/2 cup chopped tomatoes Seeded to avoid sogginess.
  • 1/4 cup diced red onion
  • 1 tablespoon olive oil
  • Salt and pepper To taste.

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle with half of the mozzarella cheese.
  3. Layer with spinach, feta, olives, tomatoes, red onion, and the remaining mozzarella cheese.
  4. Top with another tortilla and cook until golden brown, about 3-4 minutes.
  5. Carefully flip the quesadilla and cook the other side until golden and cheese is melted.
  6. Remove from the skillet, cut into wedges, and serve warm.

Notes

Don’t overload the quesadilla to help cheese and fillings melt properly. Serve with tzatziki or a simple yogurt-lemon-herb dip.
