  • 2 pieces chicken breasts, sliced
  • 2 packs ramen noodles
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon chili paste adjust wildly
  • 1 teaspoon garlic, minced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) frozen mixed veg is a great option
  • 1 tablespoon vegetable oil
  • 1/2 cup heavy cream can substitute with coconut creamer for a tropical twist
  • to taste salt and pepper
  • for garnish green onions

Method
 

Cooking
  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the sliced chicken and cook until browned and cooked through. Season with salt, pepper, and chili paste.
  3. Add the minced garlic and stir for an additional minute until fragrant.
  4. Pour in the chicken broth and soy sauce, bringing the mixture to a simmer.
  5. Add the mixed vegetables and cook until tender.
  6. Meanwhile, prepare the ramen noodles according to package instructions.
  7. Once the noodles are cooked, add them to the chicken and vegetable mixture.
  8. Reduce the heat and stir in the heavy cream, adjusting seasoning as needed.
  9. Serve hot, garnished with green onions.

Notes

For a kick in spice, adjust the amount of chili paste based on your preference. Store leftovers separately to prevent noodles from becoming mushy.
