  • 1 cup cottage cheese Use a brand you like
  • 4 large eggs
  • 1/2 cup rolled oats Old-fashioned rolled oats recommended
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract Use quality vanilla
  • to taste teaspoon salt
  • as needed tablespoon butter or oil for cooking

Method
 

Preparation
  1. In a blender, combine cottage cheese, eggs, rolled oats, baking powder, vanilla extract, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and add a little butter or oil.
  3. Pour batter onto the skillet to form pancakes.
  4. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Serve warm with your favorite toppings.
