Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, combine the mashed bananas, grated carrots, sugar, brown sugar, vegetable oil, eggs, and vanilla extract and mix well.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- If desired, fold in the chopped nuts before pouring the batter into the greased loaf pan.
Baking
- Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
