  • 3 pieces ripe bananas, mashed
  • 1 cup grated carrots Trader Joe’s has great prices on carrots.
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional) Feel free to skip for a nut-free version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, grated carrots, sugar, brown sugar, vegetable oil, eggs, and vanilla extract and mix well.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. If desired, fold in the chopped nuts before pouring the batter into the greased loaf pan.
Baking
  1. Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
