  • 1.5 teaspoons instant yeast Instant yeast for quick rising.

  • 2 tablespoons olive oil Plus more for greasing.
Topping Ingredients
  • 3 cloves garlic, minced Use fresh for best flavor.
  • 1 tablespoon fresh rosemary, finely chopped Fresh is recommended for aroma.
  • 2 tablespoons olive oil For drizzling on top.
  • 1/2 teaspoon flaky sea salt For finishing touch.
  • 1/4 teaspoon black pepper To taste.

Method
 

Preparation
  1. In a large mixing bowl, combine flour, yeast, and salt. Stir to mix.
  2. Gradually add warm water and olive oil, stirring until a shaggy dough forms.
  3. Knead the dough on a lightly floured surface for 6-8 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a clean kitchen towel, and let it rise for 1 hour or until doubled in size.
  5. Preheat your oven to 375°F (190°C).
  6. Grease a 12-cup muffin tin with olive oil or nonstick spray.
  7. Once the dough has risen, punch it down and divide it into 12 equal portions.
  8. Roll each portion into a ball and place it into the greased muffin cups.
  9. Cover with a towel and let the dough rest for 20 minutes.
Topping
  1. In a small bowl, mix garlic, rosemary, olive oil, salt, and black pepper.
  2. Using your fingers, press dimples into each muffin dough ball.
  3. Spoon the garlic-rosemary mixture evenly over each muffin.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and crisp.
  2. Let them cool slightly before removing from the pan.
  3. Enjoy warm or at room temperature!
