Forgiving Pizza

A simple and crowd-pleasing pizza recipe that's perfect for using up extra ingredients with no judgment.

Ingredients
  

Dough and Sauce
  • 1 batch pizza dough (store-bought or homemade; 12–14 inches)
  • 1 cup crushed tomatoes (good quality, no weird preservatives)
  • 1 tsp salt
  • 1 pinch sugar to balance the acidity of the tomatoes
  • 1–2 cloves garlic, minced
  • 1 tbsp olive oil important for crust quality
Toppings
  • 2 cups shredded mozzarella or a mix of mozzarella and fontina
  • 1 cup sliced mushrooms or roasted peppers or both
  • 1/2 cup cooked turkey sausage or seasoned roasted chickpeas no pork
  • to taste fresh basil, red pepper flakes, drizzle of olive oil for finishing

Method
 

Preparation
  1. Preheat your oven to its highest setting (450–500°F).
  2. Stretch the pizza dough gently and preheat your baking pan or pizza stone.
  3. Spread a thin layer of crushed tomatoes over the dough.
  4. Sprinkle salt, sugar, and minced garlic over the sauce.
  5. Distribute shredded cheese evenly, allowing some to burn slightly for flavor.
  6. Add your choice of toppings: mushrooms or roasted peppers, and turkey sausage or chickpeas.
Cooking
  1. Bake in the preheated oven until the crust is golden and crispy.
  2. Once baked, let it rest for 2 minutes before slicing.

Notes

For a blistered crust, ensure your oven and baking surface are hot. Don't overload with toppings to prevent sogginess.
