  • 1 Pound Beef Stew Meat
  • 2 Onions, sliced
  • 3 Cloves Garlic, minced
  • 4 Cups Beef Broth
  • 1 Teaspoon Thyme
  • Salt and Pepper to taste
  • 8 Ounces Egg Noodles
  • 1 Cup Grated Swiss Cheese

Cooking
  1. Heat olive oil in a large pot over medium heat.
  2. Add beef stew meat and brown on all sides.
  3. Add sliced onions and garlic, cooking until onions are caramelized.
  4. Pour in beef broth, add thyme, salt, and pepper.
  5. Bring to a simmer and let cook for about 1 hour.
  6. In a separate pot, cook egg noodles according to package instructions.
  7. Drain noodles and add to the beef mixture.
  8. Mix well and top with grated Swiss cheese.
  9. Cover and let sit until cheese is melted, then serve.

Notes

Brown the beef in batches for the best crust. Don’t rush the onions; slow cooking is key. For added brightness, consider a splash of Worcestershire or a pinch of powdered mustard. This dish can also be adapted for a quick Asian-inspired version.
