  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 cup long-grain white rice (uncooked) Do not pre-cook the rice.
  • 1 packet French onion soup mix Any brand will work.
  • 2 cups beef broth Use low-sodium for a lighter dish.
  • ½ cup sour cream Can substitute with Greek yogurt for a healthier option.
  • cups shredded mozzarella or Swiss cheese Mozzarella melts nicely.
  • ½ cup French-fried onions For topping, adds crunch.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef and drain excess grease. Season with salt, pepper, and garlic powder.
  3. In a large bowl, mix uncooked rice, French onion soup mix, and beef broth until well combined.
  4. Stir in the cooked ground beef and sour cream until fully mixed.
Baking
  1. Transfer the mixture to the prepared baking dish and top with shredded cheese.
  2. Cover with foil and bake for 40 minutes.
  3. Remove foil and bake an additional 10-15 minutes until cheese is bubbly.
  4. Sprinkle French-fried onions on top and bake for another 5 minutes until golden brown.

Notes

This casserole is forgiving and can be made ahead and frozen. You can swap turkey or chicken for the ground beef if desired.
