  • 1 block Halloumi cheese (7–9 oz) Get the real stuff labeled 'halloumi.'
  • 2–3 tablespoons Honey Use thicker honey for better glossy drips.
  • 1–2 tablespoons Olive oil A decent everyday olive oil is perfect.
  • a few sprigs Fresh thyme Optional but transformative.
  • 1 wedge Lemon Optional but recommended for serving.

Method
 

Preparation
  1. Cut the halloumi into thick slices, about ¼–½ inch thick.
  2. Pat the slices dry with a paper towel to avoid splattering.
Cooking
  1. Heat olive oil in a nonstick pan over medium heat until shimmering.
  2. Fry the halloumi slices in a single layer for 2–3 minutes until golden brown, flipping halfway.
  3. Remove from heat and drizzle generously with honey while still in the pan.
  4. Garnish with fresh thyme leaves.
Serving
  1. Serve warm as an appetizer or snack with optional lemon squeeze and toasted bread or warm pita.

Notes

This dish is best enjoyed fresh and warm. Don't forget that it can also be paired with a simple salad to make it feel more meal-like.
