Main Ingredients
  • 1 cup Greek yogurt Preferably full-fat for creaminess.
  • 1/2 cup peanut butter Use natural peanut butter for better flavor.
  • 2 tablespoons honey Optional for sweetness, but recommended.
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt Balances the sweetness.
Toppings (optional)
  • to taste Chocolate chips or nuts For topping; add as desired.

Method
 

Preparation
  1. In a mixing bowl, combine Greek yogurt and peanut butter until smooth.
  2. Add honey, vanilla extract, and salt; stir well to incorporate.
Molding and Freezing
  1. Spoon the mixture into silicone molds or onto a lined baking sheet.
  2. Sprinkle chocolate chips or nuts on top as desired.
  3. Place in the freezer for at least 2 hours or until firm.
Serving
  1. Remove from molds or baking sheet and enjoy your frozen bites.
  2. Keep any leftovers stored in the freezer for up to a month.

Notes

These bites can be made vegan by substituting Greek yogurt with coconut yogurt. They are a delightful treat for any time of day. Be sure to check your freezer to always have them on hand!
