Ingredients

Main Ingredients
  • 1 cup Greek yogurt Full-fat for best texture, 2% if negotiating.
  • 1 cup fresh figs, chopped Use fresh for best results; if sad, chop smaller.
  • 1/4 cup honey Choose high-quality honey for best flavor.
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts Optional but recommended for texture.
  • 1/4 cup granola For topping before serving.
  • a pinch salt

Method

Preparation
  1. In a mixing bowl, combine the Greek yogurt, chopped figs, honey, vanilla extract, and a pinch of salt. Stir until well combined.
  2. If desired, gently fold in the chopped nuts.
  3. Line a small baking dish (8x8-inch) with parchment paper, leaving flaps for easy removal. Pour in the mixture and spread it evenly.
  4. Freeze for at least 4 hours or until firm—overnight for best results.
  5. Once frozen, lift the slab out using the parchment and cut into bars or squares. Optionally, top with granola before serving.
Serving
  1. Enjoy the bars straight from the freezer. They soften slightly after a few minutes, which is perfect for texture.

Notes

Wrap cut bars individually or store in an airtight container for 2-3 weeks. Can use dried figs if necessary, soaked beforehand for better texture. Can be made dairy-free using a thick plant yogurt.
