Ingredients
  

For the marinade
  • 2 lbs chicken thighs You can use chicken breast but thighs are juicier.
  • 3 tablespoons shawarma spice mix Use a good quality mix.
  • 1 cup yogurt Full-fat Greek yogurt is recommended.
  • 4 cloves garlic, minced Do not use garlic powder.
  • 2 tablespoons olive oil For marinating the chicken.
  • to taste Salt and pepper Season well.
For serving
  • Pita bread or wraps
  • Vegetables (lettuce, tomato, cucumber) For toppings.
  • Tahini or garlic sauce For drizzling.

Method
 

Marinating the Chicken
  1. In a bowl, mix yogurt, shawarma spice mix, minced garlic, olive oil, salt, and pepper.
  2. Add the chicken thighs to the marinade and coat well. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
Cooking the Chicken
  1. Preheat your grill or oven to medium-high heat.
  2. Cook the chicken for about 6-7 minutes on each side or until fully cooked.
  3. Let the chicken rest for a few minutes, then slice it thinly.
Serving
  1. Serve the sliced chicken in pita bread or wraps with fresh vegetables and drizzle with tahini or garlic sauce.

Notes

For extra flavor, a quick broil at the end can enhance your chicken. Slice against the grain for tenderness.
