  • 1 pound baby potatoes Any variety, but Trader Joe’s or Aldi are budget-friendly options.
  • 3 tablespoons olive oil Use your preferred quality.
  • 4 cloves garlic, minced Minced garlic gives the best flavor.
  • Salt to taste Salt Add according to your taste preference.
  • Pepper to taste Pepper Add according to your taste preference.
Garlic sauce ingredients
  • 1/2 cup sour cream Can substitute with Greek yogurt for a tangier flavor.
  • 1 tablespoon lemon juice Adds brightness to the sauce.
  • 1 teaspoon dried oregano Herb adds complexity to the flavor.
  • Fresh parsley for garnish Fresh parsley, chopped Adds color and freshness.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the baby potatoes, then cut them in half.
  3. In a large mixing bowl, combine the olive oil, minced garlic, salt, and pepper.
  4. Add the halved baby potatoes to the bowl and toss until well coated.
  5. Spread the potatoes in a single layer on a baking sheet.
Cooking
  1. Roast in the preheated oven for 25-30 minutes, or until golden and tender.
  2. While the potatoes are roasting, mix together the sour cream, lemon juice, oregano, salt, and pepper in a separate bowl.
  3. Once the potatoes are done, remove them from the oven and drizzle the garlic sauce over them.
  4. Garnish with fresh parsley and serve warm.

Notes

Garlic loses its flavor when burned, so keep it minced and ensure the potatoes roast until they are golden and tender. For a dipping sauce style, consider adjusting the sauce consistency to preference.
