  • 4 fillets cod fillets (6 oz each) Fresh or frozen, thawed and dried.
  • 1/4 cup soy sauce A good quality soy sauce is recommended.
  • 2 tbsp honey For sweetness in the glaze.
  • 2 tbsp rice vinegar Adds a tangy flavor.
  • 1 tbsp fresh ginger, grated Use fresh for the best flavor.
  • 2 cloves garlic, minced For additional flavor.
  • 1 tbsp sesame oil A little goes a long way.
Garnishes
  • 2 green onions thinly sliced (for garnish) Adds freshness.
  • 1 tbsp sesame seeds (for garnish) To sprinkle on top.
  • Fresh cilantro, chopped (for garnish) Optional, for added flavor.
  • Lime wedges (for serving) For serving on the side.

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil.
Baking
  1. Place cod fillets on the prepared baking sheet and brush glaze evenly over each fillet.
  2. Bake for 12–15 minutes or until cod is cooked through and flakes easily with a fork.
  3. Transfer to plates, garnish with green onions, sesame seeds, and cilantro. Serve with lime wedges.

Notes

Do not drown the fish in glaze; aim for a glossy finish. Broil for 30 seconds for caramelized edges but watch carefully.
