Wet Ingredients

  • 1/2 cup butter, melted and cooled
  • 1 large egg
  • 1/2 cup hot strong coffee or black tea Trust the steam.
  • 1 tbsp orange zest Optional, but do it for the flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Warm the molasses with the butter slightly to avoid seizing up.
  3. Sift the dry ingredients together to prevent lumps.
  4. Mix the wet ingredients into the dry until well combined.
Baking
  1. Pour the batter into a prepared baking pan.
  2. Bake until a skewer comes out with moist crumbs, not wet batter.
  3. Let it cool before serving.

This gingerbread will forgive you and accept hugs, decorations, and last-minute tweaks. Store leftovers in plastic wrap for up to a week in the fridge.
