Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract.
- In a separate bowl, mix the rolled oats, flour, baking soda, and salt. Gradually stir the dry ingredients into the wet mixture until combined.
- Fold in the dark chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For chunkier chocolate pockets, chop a dark chocolate bar and fold it in. Chilling the dough for 30 minutes helps achieve thicker cookies. These cookies are also freezer-friendly.
