For the Meatballs
  • 1 pound ground beef or lamb
  • 1/4 cup breadcrumbs Use quality breadcrumbs for better texture.
  • 1/4 cup grated Parmesan cheese Pre-grated is acceptable, but fresh is preferred.
  • 1 each egg Binding agent.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley For freshness.
  • Olive oil For cooking.
For Serving
  • Lettuce or spinach Base for the bowl.
  • Tomato, diced Adds freshness.
  • Cucumber, sliced Adds crunch.
  • Tzatziki sauce For dipping and creaminess.

Method
 

Preparation of Meatballs
  1. In a large bowl, combine ground beef or lamb, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, pepper, and parsley. Mix until well combined.
  2. Shape the mixture into meatballs, about 1 inch in diameter.
Cooking
  1. Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 10-15 minutes.
Serving
  1. To serve, place a bed of lettuce or spinach in a bowl, top with cooked meatballs, diced tomatoes, sliced cucumber, and a dollop of tzatziki sauce.

Notes

Don't crowd the pan while cooking the meatballs for best results. If any meatballs fall apart, enjoy them as 'meatball confetti'. You can make meatballs ahead of time; refrigerate for 2 days or freeze for up to 3 months.
