- Meanwhile, in a blender or mixer, combine feta cheese, cream cheese, Greek yogurt, and lemon juice until smooth.
Serving
- Serve the roasted potatoes with the whipped feta on the side, garnished with fresh herbs if desired.
Notes
Cooked potatoes are forgiving; taste as you go and adjust seasoning as necessary. Can make whipped feta ahead of time for flavor to settle.
