Ingredients

For the Salad
  • 1 lb Juicy grilled steak (ribeye, sirloin, or whatever your budget allows)
  • 1 cup Sweet roasted corn (fresh or frozen, charred)
  • 4 oz Tangy gorgonzola cheese, crumbled Consider using a milder cheese if preferred.
  • 4 cups Fresh greens (arugula, spinach, or a mix) Don't be boring!
  • 1 cup Balsamic glaze Store-bought is fine; choose a good one.
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper

Method

Cooking the Steak and Corn
  1. Preheat the grill to medium-high heat.
  2. Season the steak with olive oil, salt, and pepper.
  3. Grill the steak for about 4-5 minutes on each side for medium-rare or until desired doneness.
  4. While the steak is grilling, roast the corn in a pan or on the grill until slightly charred.
Assembling the Salad
  1. In a large bowl, combine fresh greens, roasted corn, and crumbled gorgonzola cheese.
  2. Once the steak is done, let it rest for a few minutes, then slice it thinly.
  3. Top the salad with the sliced steak and drizzle with balsamic glaze.
  4. Toss gently and serve immediately.

Notes

Consider pairing with something crispy like crispy balsamic thyme potato torte. Avoid soggy greens; assemble just before serving.
