  • 1 lb ground turkey can be swapped for chicken or beef
  • 2 medium sweet potatoes, peeled & diced cut into even chunks for even cooking
  • 2 zucchinis, chopped
  • 1 onion, diced
  • 5 tbsp olive oil avocado oil can be used as an alternative
Seasonings
  • 1 ½ tsp garlic powder
  • 1 tsp dried rosemary
  • Salt & pepper to taste adjust seasoning as needed
Optional Ingredients
  • cup shredded parmesan or cheddar cheese optional for a cheesy finish

Preparation
  1. Preheat the Oven: Get that oven going at 400°F (200°C). A hot oven means perfectly tender potatoes.
  2. Prep the Sweet Potatoes: Peel and dice sweet potatoes evenly. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30 minutes until fork-tender.
Cooking
  1. Cook the Turkey: Heat olive oil in a skillet. Add the turkey, cooking until browned (about 5–7 minutes). Stir in the onion and zucchini—sauté until softened but not mushy.
  2. Bring It All Together: Mix sweet potatoes with the turkey mixture. Add garlic powder, rosemary, salt, and pepper. Sprinkle cheese if desired. Transfer everything to a baking dish and bake another 10–15 minutes.
Serving
  1. Serve & Enjoy: Let it cool for a few minutes to slice neatly. Serve warm.

Notes

For meal prep, portion into glass containers and store in the fridge. Reheat with a splash of water to keep moist. This dish can also be frozen for up to 3 months.
