  • 2 medium sweet potatoes, diced Dice smaller for quicker cooking
  • 1 cup mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil For sautéing
  • 1 teaspoon paprika Based on preference
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1/4 cup chicken broth (optional) Use if mixture seems dry

Method
 

Preparation and Cooking
  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add onion and garlic, and sauté until softened.
  4. Add ground turkey and cook until browned.
  5. Stir in diced sweet potatoes and mixed vegetables, followed by spices (paprika, thyme) and salt and pepper.
  6. If using, pour chicken broth into the mixture.
  7. Cover skillet (or transfer to a baking dish) and bake for 25-30 minutes, or until sweet potatoes are tender.
  8. Serve warm, perfect for meal prep or a family dinner.

Notes

This dish is forgiving and perfect for leftovers. It's great for meal prep and can be customized with different vegetables or proteins. Leftover cubes also work well with breakfast dishes.
