Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 cups sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
Wet Ingredients
  • 0.75 cups Greek yogurt
  • 0.25 cups neutral oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cups milk
Add-Ins
  • 0.75 cups chocolate chips

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly mixed.
  3. In a separate bowl, mix the Greek yogurt, oil or melted butter, eggs, milk, and vanilla until smooth and creamy.
  4. Pour the wet ingredients into the dry ingredients and fold gently until just combined, being careful not to overmix.
  5. Fold in the chocolate chips, saving a handful to sprinkle on top if desired.
  6. Divide the batter evenly between the muffin cups.
Cooking
  1. Bake for 18-20 minutes, until the tops are set and a toothpick comes out mostly clean with a few chocolate bits.
  2. Let cool slightly before enjoying.

Notes

These muffins can be frozen after cooling. Reheat in a toaster oven for best results.
