  • 8 small corn tortillas viva la tortilla!
  • 1 cup white sauce made with flour, butter, milk, and seasonings
  • 1 cup shredded cheese like cheddar or Monterey Jack; avoid plastic cheese
  • 1/2 cup diced onions crying has never tasted so good
  • 1/2 cup diced bell peppers adds color and crunch
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat some olive oil over medium heat.
  3. Add diced onions and bell peppers, and sauté until soft (about 5 to 7 minutes).
  4. Add shredded chicken to the skillet, mix well, and season with salt and pepper.
Assembly
  1. Fill corn tortillas with the chicken mixture and roll them up, placing them seam-side down in a greased baking dish.
  2. Cover with white sauce and sprinkle shredded cheese on top.
  3. Bake in the preheated oven for about 20 to 25 minutes or until the cheese is bubbly and golden.
