- Heat a large pot over medium heat and brown the ground turkey until cooked through.
- Add diced onion and minced garlic and sauté until fragrant.
- Stir in taco seasoning and mix to coat.
- Add black beans, diced tomatoes, corn, and chicken broth and bring to a simmer.
- Reduce heat and cook uncovered for 15 minutes.
- Turn off heat and stir in Greek yogurt until smooth.
- Season with salt, pepper, and lime juice.
- Serve hot topped with chopped cilantro.
Notes
Add Greek yogurt off-heat to prevent curdles. This soup can also be made alongside protein muffins for meal prep.
