Ingredients
  

Vegetables
  • 1 medium cucumber, finely sliced
  • ½ small red onion, diced
Dairy
  • 160 g low fat Greek yogurt
Condiments
  • 1 clove garlic, minced (or grated fresh)
  • ½ squeeze lemon or 1 tsp lemon juice
  • 6 ml olive oil
  • Salt & pepper to taste
Protein
  • 150 g cooked chicken breast, diced or shredded
Optional
  • lemon zest For added brightness

Method
 

Preparation
  1. Slice the cucumber and red onion.
  2. Dice or shred the chicken breast.
  3. Mince the garlic.
Mixing
  1. In a large bowl, combine cucumber, red onion, chicken, yogurt, garlic, olive oil, lemon juice, salt, and pepper.
  2. Add optional lemon zest for more brightness.
  3. Cover the bowl and shake vigorously, or mix with a spoon until evenly coated.
Serving
  1. Serve chilled immediately or store in the fridge with the lid on for later.

Notes

If meal-prepping, pair it with a sturdier snack for texture contrast. This salad keeps for up to 3 days in the fridge if the cucumber was dry when mixed.
