Preparation
- Start by prepping your chicken thighs. If they have bones, debone them carefully. Pat the thighs dry.
- Lightly score the thighs to help them cook evenly.
- In a bowl, mix soy sauce, oyster sauce, garlic powder, salt, and black pepper to create a marinade. Marinate the chicken for at least 15 minutes.
- After marinating, coat each thigh in cornstarch.
Cooking
- Heat oil in a pan over low-medium heat. Place chicken thighs skin side down in the pan.
- Fry for about 4-5 minutes on each side until golden brown.
- Once cooked, remove the chicken and pour out excess oil.
- Melt butter in the same pan, then add minced garlic. Cook until fragrant.
- Stir in honey and additional soy sauce, simmering until the sauce thickens before coating the chicken.

Make sure to serve fresh for optimal crispiness. You can adjust the honey for a spicier dish by adding hot sauce.
