Ingredients
  

Main Ingredients
  • 1 box Jiffy cornbread mix
  • 1/2 cup onion, grated Adds flavor
  • 1 cup water Adjust as needed
  • 1/4 cup cornmeal Optional for texture
  • to taste Salt
  • to taste Pepper
  • as needed Oil for frying Use neutral oils with high smoke points

Method
 

Preparation
  1. In a mixing bowl, combine the Jiffy cornbread mix, grated onion, and cornmeal (if using).
  2. Gradually add water until the mixture is well combined but still thick.
  3. Season with salt and pepper.
Cooking
  1. Heat oil in a deep frying pan over medium heat.
  2. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes.
  3. Remove from oil and drain on paper towels. Serve hot.

Notes

Don't crowd the pan to allow each hush puppy space to crisp. A thermometer should read about 350°F for the oil. A splash of cornmeal will improve texture.
