Salad Ingredients
  • 1 head romaine lettuce, chopped Use fresh for best flavor.
  • 1 cup cherry tomatoes, halved
  • 1 piece bell pepper, diced Any color bell pepper works.
  • 1 cup cucumber, diced
  • 1/2 piece red onion, diced Adjust to taste.
  • 1 cup olives, sliced Black or green olives can be used.
  • 1/2 cup feta cheese, crumbled Substitute with goat cheese if preferred.
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • to taste Salt and pepper Adjust seasoning to preference.
  • to taste Fresh basil, chopped (for garnish) Add just before serving.

Method
 

Preparation
  1. In a large bowl, combine the chopped lettuce, cherry tomatoes, bell pepper, cucumber, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Garnish with fresh basil before serving.

Notes

Always use fresh ingredients for the best taste. The salad can be prepared ahead of time, but keep the dressing separate until ready to serve to maintain the crispness of the veggies.
