Preparation

- In a large mixing bowl, combine shredded chicken, buffalo sauce, diced jalapeños, cauliflower rice, and Greek yogurt. Mix well.
- Season the mixture with salt and pepper.
- If using cheese, fold half into the mixture and sprinkle the rest on top.
- Transfer the mixture to a greased casserole dish and spread it evenly.
Baking
- Bake for 25-30 minutes until heated through and bubbly.
- Garnish with chopped green onions before serving.
Notes
This casserole can be prepped ahead of time and refrigerated for up to 24 hours. Add a few extra minutes to the bake time if it's coming out cold. Pairs well with rich proteins like cheesy garlic butter mushroom stuffed chicken.
