  • 1 cup cauliflower rice Fresh or frozen works.

  • 1/2 cup Greek yogurt Can substitute with a dairy-free alternative.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, buffalo sauce, diced jalapeños, cauliflower rice, and Greek yogurt. Mix well.
  3. Season the mixture with salt and pepper.
  4. If using cheese, fold half into the mixture and sprinkle the rest on top.
  5. Transfer the mixture to a greased casserole dish and spread it evenly.
Baking
  1. Bake for 25-30 minutes until heated through and bubbly.
  2. Garnish with chopped green onions before serving.

Notes

This casserole can be prepped ahead of time and refrigerated for up to 24 hours. Add a few extra minutes to the bake time if it's coming out cold. Pairs well with rich proteins like cheesy garlic butter mushroom stuffed chicken.
