For the lime cream

  • ½ cup powdered sugar Adjust sweetness to preference.
  • ½ cup freshly squeezed key lime juice Key limes have a distinct flavor.
  • 1 tablespoon key lime zest Adds extra lime flavor.

Method
 

Prepare the crust
  1. Mix the graham cracker crumbs and melted butter, then press firmly into the bottom of the trifle dish.
Make the lime cream
  1. In a chilled bowl, whip the heavy cream until stiff peaks form.
  2. In another bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar, lime juice, zest, and vanilla, scraping the bowl often.
  3. Gently fold the whipped cream into the lime mixture in thirds.
Assemble the trifle
  1. Layer half the filling over the crust, sprinkle with more crumbs, then repeat. Top with extra crumbs and zest.
  2. Chill in the fridge for at least 2 hours before serving.

Notes

Don't overwhip the cream. Press the crust firmly. Chill the dish before layering for better texture.
