  • 2 large eggs
  • 0.25 cup Key lime juice Fresh juices preferred.
  • 1 teaspoon vanilla extract
Glaze
  • Powdered sugar For glaze.
  • 0.25 cup Key lime juice For glaze.
  • 1 piece Zest of 1 Key lime For glaze.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in Key lime juice and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
Glazing
  1. For the glaze, mix powdered sugar with Key lime juice and zest until smooth.
  2. Drizzle the glaze over the cooled cake and let it set before serving.

Notes

If your oven is older, use your nose as well as a toothpick to check for doneness. For added joy, pair this cake with banana-cottage-cheese pancakes.
