- Heat sesame oil in a Dutch oven over medium-high heat.
- Season the chuck roast with salt and pepper, and sear on all sides until browned.
- Remove the roast and set aside.
- In the same pot, sauté chopped onion and minced garlic until softened.
- Return the roast to the pot, add gochujang, soy sauce, beef broth, and brown sugar. Stir to combine.
- Bring to a simmer, cover, and reduce heat, then braise for 3 to 4 hours.
- Let the roast rest before slicing.

Allowing the roast to rest ensures juiciness. Serve with rice or vegetables for a complete meal.
