Ingredients
  

For the crumble base
  • 1 cup rolled oats Use old-fashioned rolled oats for best texture.
  • 1 cup all-purpose flour Sifted flour is optional but can improve texture.
  • 1/2 cup brown sugar Light or dark brown sugar works.
  • 1/2 cup cold butter, cut into pieces Use quality butter for best flavor.
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
For the filling
  • 1 cup lemon curd Store-bought or homemade can be used.
  • 1/4 cup powdered sugar For dusting, optional.

Method
 

Preheating and Preparing
  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, salt, and baking soda.
Making the Crumble
  1. Cut in the cold butter until the mixture resembles coarse crumbs. Do not overmix.
  2. Press half of this mixture into the prepared dish.
Assembling and Baking
  1. Spread the lemon curd over the crumb base.
  2. Crumble the remaining mixture on top.
  3. Bake in the preheated oven for 30 minutes or until golden brown.
Cooling and Serving
  1. Allow to cool before slicing into bars and dust with powdered sugar if desired.

Notes

These bars can be frozen in an airtight container for later enjoyment. Allow to thaw before serving.
