Preparation
- Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment for easy cleanup.
- In a medium bowl, mix together the oats, flour, brown sugar, baking soda, and salt until evenly combined.
- Add the softened butter and mix until the mixture is crumbly and clumpy, resembling damp sand.
- Press about half of the crumble mixture into the bottom of the prepared baking dish to form a sturdy base.
Making the Lemon Layer
- In another bowl, whisk together the granulated sugar, lemon juice, lemon zest, and egg until smooth and frothy.
- Pour the lemon mixture evenly over the crust.
- Crumb the remaining oat mixture over the lemon layer.
Baking
- Bake for 25–30 minutes, or until the top is golden brown and the edges are lightly browned.
- Let the bars cool completely before cutting into squares or rectangles.
Notes
These bars can be stored in the fridge for a chewier texture. You can double the recipe for larger batches.
