  • 1 cup couscous
  • 1.25 cups vegetable broth or water Use vegetable broth for added flavor.
  • 1 piece lemon (zest) Zest only.
  • 1 tablespoon lemon juice Freshly squeezed, do not skimp.
  • 0.5 cup grated Parmesan cheese Can substitute with feta or mozzarella.
  • 2 tablespoons olive oil Used for sautéing.
  • 1 clove garlic, minced
  • 0.25 teaspoon red pepper flakes Optional; for spice.
  • Salt and black pepper, to taste
  • Fresh parsley or basil, chopped For garnish.

Method
 

Preparation
  1. Bring a medium saucepan of vegetable broth (or water) to a boil.
  2. Remove from heat and stir in the couscous. Cover and let sit for 5 minutes.
  3. In a separate pan, heat olive oil over medium heat, then add minced garlic and red pepper flakes. Sauté for about 1 minute.
  4. Fluff couscous with a fork after it has absorbed the liquid.
  5. Mix in sautéed garlic, lemon zest, and lemon juice.
  6. Stir in grated Parmesan cheese and season with salt and pepper.
  7. Garnish with fresh parsley or basil before serving.

Notes

This dish can be stored in an airtight container, but it's best enjoyed fresh. For a vegan option, skip the cheese and add nutritional yeast for extra flavor.
