Method
Cooking the Beef
- Heat the olive oil in a large skillet. Add the ground beef and cook until browned, breaking it into bits.
- Drain any excess fat and season with garlic powder, onion powder, salt, pepper, and ranch seasoning mix.
Making the Cheese Sauce
- In another saucepan, combine cream cheese, sour cream, and milk over medium heat. Stir until smooth.
- Add shredded cheddar cheese and stir until melted and creamy, seasoning with salt and pepper.
Combining Ingredients
- In a large mixing bowl, combine cooked rotini, beef mix, sweet corn, and cheese sauce. Mix well.
Baking
- Preheat oven to 375°F (190°C). Transfer mixture to a greased 9x13-inch baking dish.
- Spread evenly and sprinkle more cheddar cheese on top. Bake for 20-25 minutes, or until golden and bubbly.
Serving
- Garnish with fresh parsley and serve.
Notes
Feel free to use a different type of pasta if rotini isn't available. If you wish to swap cheeses for a dairy-free option, ensure it melts well.
