Loaded Taco Pasta Bake

  • 8 oz elbow macaroni Cook according to package instructions
  • 1 lb ground beef Brown until fully cooked
  • 1 can (15 oz) black beans, drained and rinsed Canned is convenient for this recipe
  • 1 cup corn, frozen or canned Adds sweetness and texture
  • 2 cups shredded cheddar cheese Quality cheese improves melty factor
  • 1 packet taco seasoning Use your favorite brand
  • 1 can (14 oz) diced tomatoes with green chilies Adds flavor and moisture
  • 1 cup salsa Add less to avoid sogginess
  • 1/2 cup sour cream For creaminess
  • 1/4 cup chopped green onions For garnish
  • to taste Salt and pepper Season as desired

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions until al dente, then drain.
  3. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  4. Stir in taco seasoning, diced tomatoes, salsa, black beans, corn, and sour cream. Mix until well combined.
  5. In a large mixing bowl, combine the cooked macaroni and the beef mixture.
  6. Transfer half of the mixture to a greased 9x13 inch baking dish and sprinkle half of the cheddar cheese on top.
  7. Layer the remaining beef mixture and top with the remaining cheese.
Baking
  1. Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  2. Remove from oven, garnish with chopped green onions, and serve hot.
