Main Ingredients
  • 2 cups nonfat Greek yogurt Plain or vanilla — plain if you prefer a purist flavor.
  • 1 cup mashed fruit Options include strawberries, mango, or mixed berries.
  • 3-4 tbsp honey or sugar substitute Adjust sweetness to taste.
  • 2 tsp vanilla extract
  • 1 pinch salt
  • 2 tbsp dark chocolate chips or chopped nuts Optional for added texture.

Method
 

Preparation
  1. In a large bowl, mix the Greek yogurt, mashed fruit, honey or sugar substitute, vanilla extract, and salt until well combined.
  2. If desired, fold in dark chocolate chips or chopped nuts for added texture.
  3. Pour the mixture into a low pan and spread it out evenly.
  4. Cover the pan tightly with plastic wrap, ensuring the wrap is in contact with the surface to prevent ice crystals.
  5. Freeze for at least 2 hours or until solid.
Serving
  1. When ready to serve, run warm water over the bottom of the pan for a few seconds to loosen the bars.
  2. Cut into bars and enjoy!

Notes

For best results, use a low pan to freeze flat. Silicone molds can help create fun shapes. Freeze the bars tightly sealed to avoid ice crystals.
