Slaw Ingredients
  • 2 pieces ripe mangoes, peeled and diced Use organic if possible.
  • 2 cups shredded cabbage (green, red, or both) Feel free to mix for color.
  • 1 piece bell pepper (any color) Choose your favorite color.
  • 1/4 cup red onion, finely chopped Can substitute with yellow or white onion.
  • 1/4 cup fresh cilantro, chopped Substitutions: parsley or chives if desired.
Dressing Ingredients
  • 1 piece lime, juiced Add extra wedges for serving.
  • 2 tablespoons olive oil Feel free to adjust according to taste.
  • to taste salt and pepper Season according to preference.

Method
 

Preparation
  1. In a large bowl, combine diced mangoes, shredded cabbage, bell pepper, red onion, and cilantro. Toss them well.
Dressing
  1. In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper.
  2. Pour the dressing over the slaw and toss to combine.
Serving
  1. Serve immediately or refrigerate for about 30 minutes to allow flavors to meld.

Notes

This slaw is best served fresh but can be made ahead of time. Just dress it right before serving to avoid sogginess. For added protein, consider adding grilled chicken or shrimp.
