Preparation
- Cook the pasta according to package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper.
Cooking
- In a large skillet over medium heat, add olive oil.
- Add the chicken and cook until golden on both sides and cooked through, about 6-7 minutes per side.
- Remove chicken from skillet and set aside.
- In the same skillet, add garlic and sun-dried tomatoes and cook for 1-2 minutes until fragrant.
- Stir in heavy cream, Parmesan cheese, and Italian seasoning, cooking until the sauce thickens.
- Add the cooked pasta and toss to coat. Slice the chicken and place it on top of the pasta.
Serving
- Garnish with fresh basil before serving.
Notes
Slice the chicken against the grain for tender bites, and don’t skimp on the Parmesan. For a sweeter, nuttier counterpoint, serve with honey wheat bread for a thoughtful touch.
