Preparation
- Preheat the oven to 350°F (175°C) and lightly grease a muffin tin.
- In a large bowl, whisk together the eggs and sour cream until smooth.
- Stir in the shredded cheese, Parmesan cheese, and chopped chives.
- Gently fold the chilled mashed potatoes into the egg mixture, mixing thoroughly but carefully.
- Spoon the mixture into the muffin tin, filling each cup about three-quarters full.
Baking
- Place the tin in the oven and bake for 20-25 minutes, or until the tops are golden brown and puffed up.
- Allow the puffs to cool slightly before removing them from the muffin tin.
Notes
These puffs can be made ahead of time and reheated in the oven. They freeze well and can be reheated at 350°F until warmed through.
