  • 4 fillets cod or tilapia fillets (about 1–1.5 pounds)
  • 1 whole lemon (zest + juice) Use fresh lemon for best flavor.
  • 1 cup cherry tomatoes, halved Feel free to use any color of cherry tomatoes.
  • 1/2 cup black olives, pitted and roughly chopped Substitute with capers if preferred.
  • 3 cloves garlic, minced
  • 1 tsp dried oregano Or a handful of fresh if you prefer.
  • 3 tbsp olive oil Drizzle evenly over the dish.
  • 2 tbsp fresh parsley, chopped For garnish before serving.
  • 1 loaf crusty bread Optional but recommended for dunking.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Arrange the fish fillets in a baking dish.
  3. Squeeze lemon juice over the fish.
  4. Top with cherry tomatoes, olives, minced garlic, and oregano.
  5. Drizzle with olive oil.
  6. Bake for 20-25 minutes until the fish is cooked through.
  7. Garnish with fresh parsley before serving.

Notes

For additional flavor, squeeze more lemon at the table. Avoid pairing with sad microwaved rolls. This recipe is simple enough for casual nights but elegant enough for guests.
