Mediterranean Breakfast Sandwich

Ingredients
  

Main Ingredients
  • 2 pieces eggs
  • 1/4 cup feta cheese, crumbled Buy from a decent source, preferably block feta.
  • 1 medium tomato, sliced Make sure the tomato is ripe.
  • 1 cup fresh spinach Aldi is great for spinach steals.
  • 2 slices whole grain bread Avoid overly dense bread.
  • to taste none salt and pepper
  • for cooking none olive oil Use a drizzle for the skillet.
Optional Extras
  • to taste none hummus For spreading on the bread.
  • a few pieces kalamata olives
  • to taste none lemon juice A squeeze for freshness.

Method
 

Cooking
  1. In a skillet, heat a drizzle of olive oil over medium heat.
  2. Crack the eggs into the skillet and cook to your desired doneness. Season with salt and pepper.
  3. Meanwhile, toast the slices of bread.
  4. On one slice of toasted bread, layer the spinach, cooked eggs, sliced tomatoes, and crumbled feta.
  5. Top with the second slice of bread.
  6. Cut in half and serve.
  7. Optionally, press the sandwich briefly in the pan for 30 seconds for a panini-like vibe.

Notes

Assemble right before eating to avoid sogginess. Can be made vegetarian or vegan by substituting ingredients.
