Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- Add the chicken breasts to the bowl and coat them thoroughly with the marinade.
Cooking
- In a baking dish, arrange the marinated chicken breasts and scatter the artichokes and olives around them.
- Pour any remaining marinade over the chicken and vegetables.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F or 75°C).
- Garnish with fresh parsley before serving.
Notes
For added flavor, brown the chicken for two minutes per side in a skillet before baking. Let it rest after cooking; this helps retain moisture.
