Ingredients
  

Pasta and Vegetables
  • 12 oz pasta (penne, fusilli, or any preferred shape) Cook until al dente.
  • 1 pint cherry tomatoes Halved.
  • 1 medium cucumber Diced (English if you're feeling fancy).
  • 6 oz feta cheese Crumbled.
Dressing
  • 3 tbsp extra-virgin olive oil Don't skimp on quality.
  • 1.5 tbsp red wine vinegar
  • 2 cloves garlic Minced.
  • to taste salt
  • to taste fresh cracked pepper
Herbs
  • to taste fresh herbs (basil and/or parsley) Chopped.

Method
 

Preparation
  1. Cook the pasta according to the package instructions. Drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumbers, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and pepper to make the vinaigrette.
  4. Add the cooked pasta to the bowl with the vegetables and feta.
  5. Pour the vinaigrette over the pasta salad and toss gently to combine.
  6. Add fresh herbs and toss again.
  7. Serve chilled or at room temperature.

Notes

For added flavor, consider incorporating halved olives or toasted pine nuts. Avoid drowning the pasta in dressing; taste and adjust to preference. Make ahead and chill for a friendly flavor boost.
