Main ingredients
  • 1 pound shrimp, peeled and deveined Fresh shrimp recommended for best flavor.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped You can use Trader Joe’s sun-dried tomatoes for convenience.
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon dried oregano
  • to taste salt and pepper Adjust according to preference.
  • 1 cup feta cheese, crumbled Never too much feta!

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the chopped sun-dried tomatoes and cook for another 2 minutes.
  4. Add the shrimp and season with oregano, salt, and pepper. Cook until shrimp are pink and opaque, about 3-4 minutes.
  5. Remove from heat and stir in the chopped parsley.
  6. Top with crumbled feta cheese before serving. Enjoy immediately.

Notes

This dish is forgiving, and you can adjust seasoning as desired. Great served with pasta.
