Ingredients
  

Main Ingredients
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil Use good quality olive oil
  • 2 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional) Adjust to spice preference
  • 1/2 cup feta cheese, crumbled Buy decent feta for the best flavor
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Cooking Steps
  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the shrimp and cook for 2-3 minutes until pink and opaque.
  4. Stir in the sun-dried tomatoes, oregano, and red pepper flakes. Cook for another 2 minutes.
  5. Season with salt and pepper to taste.
  6. Remove from heat and sprinkle feta cheese and parsley on top.
  7. Serve warm as a main dish or appetizer.

Notes

Can be served with crostini or pasta. Pair with a good quality olive oil for best results.
